Co-owner Nancy Salemi loves Mexican culture, her great interest in their artwork and crafts, and her extensive travels throughout the country shine through in the design and detail in the restaurant, as well, as her desire to always find new and different recipes, and tweak them to fit into Cholo’s agenda. Her biggest passion is making simple street vendor food taste great. This type of devotion coupled with her business sense and former restaurant experience compliment her partner Steve’s assets.

Steve Ellis' sense of business is unique in that he always sees the big picture and focuses on the future, growth, and expansion. His goals are set high and he seldom fails. He has been an entrepreneur since the ripe young age of 18, Owning a surf shop, and one of the first cable companies in Boston just to mention a few. At Cholo's Steve focuses on efficiency and speed and has managed to create the fastest producing kitchen imaginable and without adding more people while maintaining the quality of the food.

It was their intention to create a friendly festive atmosphere, where people would gather to meet and make friends, enjoy good food and drinks at a great price.

The staff does and has always played and important part at Cholo's. Many of the staff has been with Cholo's from the very beginning or for quite some time and are very loyal. They are treated well and multi talented also. Among them we have, artist, bakers, jewelers, surfers, surf board shapers, dancers, skaters, and musicians.
